Method

The Girò grape is an ancient variety originally from Alicante. The vines grow on limestone soil on a peninsula facing the Balearic Sea, where ocean breezes infuse a hint of saltiness into the wine. It undergoes 5 days of maceration and is aged for 6 months in stainless steel. Fermented with native yeasts, unfiltered and unfined, with no additional sulphites.
